Super-easy salmon burgers

Yumm -- I love trying new recipes.  I made these salmon burgers the other day, I thought I'd share them, as the outcome was delightfully delicious!

This recipe is an adaptation of this recipe shown on the Steven and Chris show.  I made slight modifications to the recipe:

Here are the ingredients: (approximate measurements)
2 cans of salmon
2 eggs, lightly beaten
1/2 large white onion, diced and caramelized
1/2 sweet potato, cooked and mashed
1/2 cup bread crumbs
salt & pepper to taste


 
Drain salmon and empty cans into a medium sized bowl.  Add eggs and mix together.

 Add mashed sweet potato, cooked onions and breadcrumbs to salmon mixture until well combined.  Season with salt and pepper

 Use an ice cream scoop to measure out salmon mixture and form balls into patties.
Pan fry patties until brown on both sides and place onto a lightly greased cookie sheet.

 Once all patties are browned, place cookie sheet into oven.  Finish cooking process off in oven (375 degrees) for about 15-20 minutes, or heated through.


Serve on multigrain buns with ketchup and mayonnaise (and fixings of choice).

This recipe made around 11-12 patties.  The leftover (cooked) patties were refrigerated and they reheated well for leftovers the next day.
